A Southern comfort food classic with a Tex-Mex twist!
What you'll need
1. 8 oz pasta (penne or rotini)2. 1 lb ground beef3. 1 small onion, diced4. 1 can Rotel tomatoes (mild, original, or hot—your choice!)5. 8 oz Velveeta cheese, cubed6. 1/2 cup milk7. 1 tsp garlic powder8. 1 tsp chili powder9. Salt and pepper to taste
Step 1 – Cook the Pasta
Cook 8 oz pasta al dente. Drain and set aside.
Step 2 – Brown the Beef
In a skillet, brown 1 lb ground beef with 1 diced onion.
Step 3 – Add Rotel and Seasonings
Add 1 can Rotel, 1 tsp garlic powder, 1 tsp chili powder, salt, and pepper. Simmer 5 minutes.
Step 4 – Add Cheese and Milk
Reduce heat. Add 8 oz cubed Velveeta and 1/2 cup milk. Stir until melted and creamy.
Step 5 – Combine with Pasta
Add cooked pasta to the skillet and toss to coat.
Serve
Serve hot, garnished with parsley or green onions. Great with garlic bread!
